White Bean Smash

This is a versatile concoction - as a sandwich, in a wrap and in a taco!

1 tsp. olive oil

1 medium onion, chopped

1 seeded jalapeno, chopped

1/2 riced sweet potato (or other riced style vegetable)

1/2 tsp. salt

1/2 tsp. chili powder

1/2 tsp. garlic powder

1 can white northern beans, rinsed

optional toppings: whole grain sandwich bread, lettuce, avocado, pickles, hot sauce, mayo

In a large skillet, heat oil. Add onions and cook 3-5 minutes, or until soft.


Add jalapeño and sweet potato and cook an additional 3-5 minutes, or until throughly cooked.


Add the salt, chili powder and garlic powder and stir well. Add the beans and smash with the back of a large fork until you have the consistency you want (I like to leave some of the beans whole). Stir until the beans are blended with the onion/spices, and until the white bean smash is heated completely.

Add additional toppings or anything else you think sounds good!
