Trail Picnic Salad

As far as we're concerned, everything tastes better when you eat outside. Taking a meal or even just a cup of tea, kombucha or a glass of wine outdoors - the flavors take on a whole new perspective. Enjoying the pleasure of a small gathering, a friend, or even solitude layered with: a light breeze, sunshine, moonlight, birds chirping, an amazing view, the sound of laughter, or a soul filling conversation - paired with food and drink. It's living at it's best. The next time you have an opportunity - take your nourishment outside!


I went hiking with my hiking buddies Barb (and my best 4-legged trail companions Oscar and Fitz) at Reservoir Ridge near Fort Collins, Colorado. Our "table" was set up on a rock and we enjoyed this lightly dressed salad with crackers. Tasting the sweet of the apples and grapes, the crunch of the almonds and the tang of the lightly dressed greens - all while looking at mountains and the blue sky - it was a memorable meal!


2 large handfuls of mixed greens

12 red grapes, cut in half

1/2 crisp apple, cut into small bites

1/2 C. almonds, chopped large


dressing:

1 TBS. olive oil

1 TBS. red wine vinegar

1/2 tsp. dijon

1/2 tsp. maple syrup

pinch salt


In a medium sized bowl, add the greens, grapes, apple and almonds. In a small bowl, add all the dressing ingredients and whisk until well blended. Start to pour the dressing on the greens - only adding enough so that it's lightly dressed. A little goes a long way. Pack in containers if you are headed out for a picnic, along with a frozen gel pack to keep it cool and fresh.
