Indian Spiced Cashews

These tasty baked nuts are so delicious and are perfect in salads, wraps, as a topping on soup or on their own as a snack. So versatile, they deserved a post of their own! By limiting the heat, you can truly customize to suit your palette. In this recipe we use organic, raw cashews. 2 C. raw, organic cashews (I got a big container at Costco here in Fort Collins, CO)

Olive oil (enough to lightly coat the nuts - about 1 - 1 1/2 TBS.)

1 heaping tsp. curry

1/2 tsp. cumin

1/4 tsp. turmeric

pinch - 1/4 tsp. Indian chili powder (It's hot, FYI. Easily found online or at Indian markets)

1/2-1 tsp. salt, according to your taste

Preheat oven to 350°

In a medium bowl, add nuts and olive oil. Stir until lightly coated. Add additional oil if needed. In a separate small bowl add all spices and stir until blended. Add to nuts and stir until the nuts are well coated with the spice mixture. Place on a cookie sheet and place in the oven for 5-7 minutes. Keep an eye on them so they don't burn. Be sure to set your timer. A nice aroma will begin to fill your kitchen. Allow the nuts to cool completely.


5-7 minutes is a nice amount of time to practice pranayama, translated from Sanskrit meaning breath practice or control. After the timer is set, sit upright in a chair. Start to soften the facial muscles, close the eyes and begin to clear the mind. Allow the breath to fill and release naturally. After about a minute, start to count in your head during the inhale 1-2-3-4, then exhale 1-2-3-4. Slowly and steadily. Repeat until the timer goes off.

By doing this practice, you are enriching the blood with oxygen, encouraging muscle relaxation, and lowering blood pressure. Pranayama practice is also known to improve lung function, treat depression, help digestive problems and improve mental focus.
